I always cut the sugar cane into small pieces (after removing the skin) and chill them in the refrigerator as my healthy cold sweet snack. To cut the sugar cane into several pieces (preferably two sections each), use the heel of the knife, hit firmly around the sugar cane as you rotate it. Stand a piece of the sugar cane on its end and cut downward to remove the skin. On a cutting board, cut off the joints. Cut the sugar cane into small pieces. Sugar cane is now ready to eat. Store the leftover in the refrigerator for later use.
