The simplest method for growing bean sprouts at home is to use a bean sprout machine. The bean sprout machine will automatically spray water on the beans keeping your beans moist. It takes 3 days (approximately 46 hours) to sprout mung beans. However, this is only an approximation and can vary. Cooler temperatures will slow the growing process, and warmer climates can speed it up. Another point to note, mung bean sprouts must be grown in the dark to prevent changing in color and bitterness. Wash mung beans, sort out any bad beans. Soak the beans in water for 5 hours. Drain and rinse the beans thoroughly.
Spread the beans evenly into three bean sprout trays. Place some pebbles on the beans. Put water in the bean sprout machine. Assemble the machine. Cover the container with a shade cloth. Turn on the machine.
Change the water in the machine every morning and night. When the sprouts reach about 1 inch long, remove fibrous roots and wash them in cold water. The sprouts are best eaten soon after washing, but can be stored for several days in the refrigerator.
